The powdered product formed by encapsulating functional oils (such as unsaturated fatty acids, plant oils, structured lipids) within natural or synthetic polymer wall materials through microencapsulation technology, typically has an oil-in-water (O/W) microstructure configuration. The core process involves utilizing wall materials (e.g., proteins, starches, cellulose derivatives) to encapsulate liquid oils into micron-sized capsule particles via spray drying or coacervation techniques, thereby enabling the oils to be uniformly dispersed as tiny oil droplets in the wall material matrix and forming a free-flowing powder. With its unique "powdered oil" properties, microencapsulated oil powder not only preserves the functional activity of the oils but also offers the processing convenience of solid materials, making it a crucial technological means for efficient utilization of oils in the food and health sectors.

The wall material systems for microencapsulated oil powders can generally be divided into two major categories based on
the source of the matrix wall material:vegetarian and non-vegetarian.
